Some blended whiskies are put together based on taste alone. The two expressions in Stellum's first Black Specialty Series Set combine flavor with interesting backstories. The Black Specialty Equinox Bourbon was crafted by combining rare sets of bourbon barrels over time, before finishing the process on the Vernal Equinox to celebrate the changing seasons. It offers dried apricot, honey, grapefruit, and jasmine notes, with a lengthy sweet and savory finish. The Fibonacci sequence — a series of numbers, each the sum of the two previous numbers — informs the Black Specialty Rye. Six separate rye blends were combined using this method to create a balanced sipper exhibiting flavors of honey, lemon, brown sugar, and oak, with the latter becoming more prominent in the finish. This set includes a bottle of each.
