The latest release in the Dair Ghaelach series is an exploration into using native oak to age Irish whiskey.
A growing collection in the Very Rare family from Midelton, the Dair Ghaelach series is the result of a six-year exploration into using native oak to age Irish whiskey. The fifth chapter in the series, Midleton Very Rare Dair Ghaelach Tree No. 4 begins in Kilranelagh Estate near Baltinglass, County Wicklow where their Irish oak was chosen to live in in the form of whiskey casks. These casks were filled with a carefully chosen range of fifteen- to twenty-eight-year-old Single Pot Still whiskeys previously matured in American oak barrels. On the palate, notes of toasted wood, honeyed spice, and subtle fruit weave together, finishing long and complex.
