When Fishwife's Becca Millstein and Fly By Jing's Jing Gao work out of the same office, collaboration is inevitable. Now in its third year, that partnership adds a new flavor: Smoked Salmon with Sweet and Spicy Zhong. The salmon comes from Kvarøy Arctic, a Fair Trade USA-certified Norwegian farm run by the same family for three generations, wood-smoked in small batches and hand-packed at a fifth-generation cannery on the Washington coast. Fly By Jing's Zhong brings the contrast: soy, black vinegar, sesame, and dried chili against the caramelized smoke of the salmon. Three tins, one gift box.
