Wild-harvested and slow to mature, this Tobalá mezcal leans into precision without losing its roots. Produced by Fidencio Mezcal, it starts with 100% Tobalá agave sourced from Santa Dionisio Ocotepec, left to grow for 12 to 15 years before being pit-roasted over black oak and double distilled in copper. The result is layered but clean, with bright fruit, mineral notes, light smoke, and a briny finish that shifts with each sip. Behind it is a four-generation lineage that traces back to Fidencio Jiménez, built on traditional methods and carried forward with a deep respect for the process.
