Rare Oregon garryana oak gives Bardstown's 2026 Discovery Bourbon a distinctive finishing treatment. The blend combines bourbons aged 7, 10, and 11 years, then rests for four months in custom-made garryana barrels hand-toasted for three hours by Oregon Barrel Works. Summer aging maximizes extraction from the unusually aromatic oak, layering toasted spice and complexity onto the mature bourbon before gradual proofing and bottling. Burnt sugar and baked apple cobbler lead into dried cherry and cinnamon bark, with the rare garryana oak carrying through a long, warming finish.
