While albacore is known as a premium species of tuna, that doesn't mean it can't benefit from an added blast of flavor. These tins from Fishwife start with albacore caught in the Bay of Biscay between June and August for peak quality, then packed by hand at a traditional Spanish cannery founded in 1869 with Spanish olive oil infused in-house using hot paprika, cayenne, white pepper, garlic, and salt.
