A finish in oak casks previously used to mature Awamori gives this rye a noticeable umami boost.
A unique aging process can make a huge difference in a drink. That's certainly the case with World Whiskey Society's 12 Year Straight Rye in Awamori Cask. As the name suggests, it's finished in oak casks from Okinawa that formerly held the distilled rice spirit, following an initial stint in American oak barrels. Thanks to its high rye content, it's a bold and spicy sip, with flavors of black pepper and cinnamon balanced by sweet notes of caramelized sugar and honey; the Awamori finish makes itself known with subtle flavors of umami, brine, coconut, and mango. Limited to just 356 bottles worldwide.
